Consumers Still Beefing Up

Beef demand continues to rise while pork holds its own and chicken tastes drop.

Whatever their other priorities, Americans are still eating plenty of beef.

Consumer demand for beef is experiencing encouraging growth, says a report from the Chicago Mercantile Exchange.

The report cites the U.S. Consumer Demand Indexes computed monthly by University of Missouri Professor Glenn Grimes.

The most recent index shows that - for the first 5 months of 2007 - demand for beef rose 1.1%.

Pork demand climbed by 0.6%. But consumer demand for chicken fell 3.5%.
